Recipe of The Week


Here is a recipe for a cherry almond pudding!
Cherry Almond Pudding 
1/3 cup sugar
1/4 cup cornstarch
Pinch salt
2 cups almond milk
1/2 tsp. almond extract
1/3 cup vegan graham cracker cookie crumbs
1/3 cup frozen cherries, thawed
3 Tbsp. chopped almonds
Chopped mint leaves
  • In a small bowl, combine the sugar, cornstarch, and salt.
  • In a medium saucepan, whisk the sugar mixture with the almond milk.
  • Bring the mixture to a boil for 2 minutes, whisking frequently.
  • Set the heat to medium-low and continue to cook for 5 to 7 minutes, whisking occasionally, until thick.
  • Stir in the almond extract and pour into a container. Refrigerate for about 2 hours.
  • In the bottom of four individual glass serving bowls, layer the graham cracker crumbs, pudding, and cherries.
  • Top with any leftover pudding and cookie crumbs and garnish with the chopped almonds and mint leaves.
  • Enjoy!
